- 2 medium zucchinis (sliced into half-moons)
- 8 oz cremini or button mushrooms (sliced)
- 2 tbsp extra virgin olive oil
- 3 cloves garlic (minced)
- 2 tbsp soy sauce
Instructions
- Start by washing your zucchinis under cold water. After rinsing, slice them into half-moons.
- Give your mushrooms a quick wipe with a damp paper towel, then slice them.
- In a large skillet, drizzle in 2 tablespoons of extra virgin olive oil and warm it over medium heat.
- Toss in the minced garlic and sauté it for about a minute.
- Add the zucchini slices to the pan and cook for about five minutes.
- Stir in the sliced mushrooms and soy sauce and continue cooking for another five minutes.
- Transfer the vegetables to plates and serve warm.

Serve with fresh herbs, a squeeze of lemon, or a sprinkle of cheese for added flavor.
