Ingredients

  • 2 medium zucchinis (sliced into half-moons)
  • 8 oz cremini or button mushrooms (sliced)
  • 2 tbsp extra virgin olive oil
  • 3 cloves garlic (minced)
  • 2 tbsp soy sauce

Instructions

  1. Start by washing your zucchinis under cold water. After rinsing, slice them into half-moons.
  2. Give your mushrooms a quick wipe with a damp paper towel, then slice them.
  3. In a large skillet, drizzle in 2 tablespoons of extra virgin olive oil and warm it over medium heat.
  4. Toss in the minced garlic and sauté it for about a minute.
  5. Add the zucchini slices to the pan and cook for about five minutes.
  6. Stir in the sliced mushrooms and soy sauce and continue cooking for another five minutes.
  7. Transfer the vegetables to plates and serve warm.
