Description

Delightful salted caramel cookies that are soft, chewy, and loaded with gooey caramel bits.


Ingredients

  • 1 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup caramel bits
  • Sea salt for topping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In another bowl, whisk together the all-purpose flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients and stir until just combined.
  6. Gently fold in the caramel bits.
  7. Line the baking sheet with parchment paper.
  8. Scoop rounded tablespoons of dough onto the baking sheet, leaving space for spreading.
  9. Sprinkle sea salt on top of each dough ball.
  10. Bake for 10-12 minutes, until edges are golden brown and centers may look undercooked.
  11. Cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For best results, use room temperature ingredients and don’t overbake. Feel free to experiment with add-ins such as nuts or chocolate chips.
