  • 1 cup sour cream
  • 0.75 cup salsa verde
  • 8 small corn tortillas (6-inch)
  • 2 cups chopped tomatoes
  • 2 cups shredded Pepper Jack or Monterey Jack cheese
  • 0.25 cup fresh cilantro, chopped
  • Avocado slices (for garnish)
  • Green onions (for garnish)
  • Lime wedges (for garnish)
  • Extra salsa (optional toppings)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare an 8×8-inch or 9×9-inch baking dish by greasing it.
  3. Mix the sour cream and salsa verde in a bowl until smooth.
  4. Prepare four corn tortillas by dipping them in cool water.
  5. Layer the tortillas in the bottom of the baking dish and spread half of the salsa verde sauce.
  6. Follow with half of the shredded chicken, tomatoes, cilantro, and cheese.
  7. Repeat the layering process with the remaining ingredients.
  8. Bake the casserole for 20 to 25 minutes until hot and bubbly.
  9. Let it rest for 5 minutes before serving.
  10. Garnish with avocado, lime, and green onions before serving.
