- 1/2 cup unsalted butter, softened
- 1/2 cup creamy peanut butter
- 1/2 cup light brown sugar, packed
- 1/2 cup granulated sugar
- 1 large egg, room temperature
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 1/2 cups Reese’s Peanut Butter Cups, chopped
- 1/2 cup semi-sweet chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and prepare two baking sheets.
- Cream together the butter, peanut butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- Whisk together the flour, baking soda, and salt in another bowl.
- Gradually mix the dry ingredients into the wet ingredients until just combined.
- Fold in the chopped Reese’s Peanut Butter Cups and semi-sweet chocolate chips.
- Scoop about 2 tablespoons of dough per cookie onto the prepared baking sheets.
- Bake for 10 to 12 minutes, until the edges are set.
- Allow to cool on the baking sheets for 10 minutes before transferring to a wire rack.
Notes
These cookies are best enjoyed warm with a glass of cold milk or a scoop of ice cream.
