This Red Lobster Biscuit Chicken Pot Pie combines two comfort food favorites — flaky, cheesy biscuits and creamy chicken pot pie filling — into one irresistible dish. It’s rich, cozy, and absolutely unforgettable!
Ingredients
2 cups cooked chicken breast, shredded or diced
1 cup frozen peas and carrots
1/2 cup corn kernels
1/2 cup diced onion
3 tbsp butter
3 tbsp all-purpose flour
2 cups chicken broth
1 cup milk or heavy cream
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp thyme
1 package Red Lobster Cheddar Bay Biscuit mix (plus ingredients listed on package for preparation)
Instructions
1. Preheat your oven to 400°F (200°C).
2. In a large skillet, melt butter over medium heat. Add diced onion and cook until softened.
3. Stir in flour and cook for 1 minute to form a roux.
4. Gradually whisk in chicken broth and milk until smooth and thickened.
5. Add garlic powder, onion powder, salt, pepper, and thyme. Stir well.
6. Add cooked chicken, peas, carrots, and corn. Simmer for 3–5 minutes until heated through.
7. Pour mixture into a greased 9×13-inch baking dish.
8. Prepare the Red Lobster biscuit mix according to the package directions.
9. Drop biscuit dough evenly over the top of the chicken mixture.
10. Bake uncovered for 20–25 minutes, or until the biscuits are golden brown and the filling is bubbling.
11. Let cool for 5 minutes before serving.
Notes
Add a sprinkle of extra cheddar cheese on top of the biscuits before baking for even more flavor.
Use rotisserie chicken for a quick and easy option.
You can make this ahead — assemble, refrigerate, and bake when ready.
For individual servings, divide filling into ramekins and top each with biscuit dough.
Serve with a side salad for a complete meal.
