Ingredients

- 1 tablespoon of olive oil
- 1 pound of asparagus, trimmed tips, cut into 2-inch pieces
- 2 cups of cherry tomatoes, halved
- 3 cloves of garlic, minced
- 1 teaspoon of dried basil
- 1 teaspoon of dried oregano
- Salt and pepper to taste
- 1 pound of ravioli
- Grated Parmesan cheese for serving
Instructions
- In a large skillet, heat the olive oil over medium heat.
- Add the asparagus and sauté for about 3-4 minutes until it is slightly tender.
- Next, add the cherry tomatoes, minced garlic, dried basil, dried oregano, salt, and pepper. Cook this mixture for an additional 2-3 minutes until the tomatoes begin to soften.
- Meanwhile, cook the ravioli according to the package instructions. Drain it and set it aside.
- Once the ravioli is cooked, add it to the skillet with the asparagus and tomatoes. Gently toss everything together to combine and warm through.
- Serve the ravioli topped with grated Parmesan cheese.
Notes
For best flavor, use fresh vegetables. Adjust seasonings to taste.
