Description

A quick and healthy pasta dish featuring fresh asparagus, cherry tomatoes, and garlic, perfect for busy weeknights.


Ingredients

  • 1 tablespoon of olive oil
  • 1 pound of asparagus, trimmed tips, cut into 2-inch pieces
  • 2 cups of cherry tomatoes, halved
  • 3 cloves of garlic, minced
  • 1 teaspoon of dried basil
  • 1 teaspoon of dried oregano
  • Salt and pepper to taste
  • 1 pound of ravioli
  • Grated Parmesan cheese for serving

Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the asparagus and sauté for about 3-4 minutes until it is slightly tender.
  3. Next, add the cherry tomatoes, minced garlic, dried basil, dried oregano, salt, and pepper. Cook this mixture for an additional 2-3 minutes until the tomatoes begin to soften.
  4. Meanwhile, cook the ravioli according to the package instructions. Drain it and set it aside.
  5. Once the ravioli is cooked, add it to the skillet with the asparagus and tomatoes. Gently toss everything together to combine and warm through.
  6. Serve the ravioli topped with grated Parmesan cheese.

Notes

For best flavor, use fresh vegetables. Adjust seasonings to taste.
