- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- ¼ cup sugar
- 2 cups cream cheese, softened
- 1 cup sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups fresh raspberries (or frozen, thawed and drained)
- 1 tablespoon cornstarch
Instructions
- Preheat your oven to 325°F (160°C) and prepare a 9×13-inch baking pan with parchment paper.
- Mix together the graham cracker crumbs, melted butter, and ¼ cup of sugar until well combined, then press firmly into the bottom of the pan.
- Bake the crust for about 10 minutes, until lightly golden.
- Beat the softened cream cheese and 1 cup of sugar together in a large bowl until smooth and creamy.
- Add the eggs one at a time, mixing well after each, then stir in the vanilla.
- Toss fresh raspberries with cornstarch in a separate bowl to absorb excess moisture, then fold them gently into the cream cheese mixture.
- Pour the cheesecake filling over the baked crust and spread evenly.
- Bake for 30 to 35 minutes until slightly jiggly in the center.
- Cool the bars in the pan on a wire rack until room temperature, then refrigerate for at least 4 hours or overnight to set.
- Lift the bars out of the pan using parchment paper, slice, and serve!
Notes
For added flavor, serve chilled with whipped cream or fresh raspberries. Store in an airtight container in the refrigerator for up to five days.
