Ingredients

- 1 cup oats
- 1/2 cup pumpkin puree
- 1/4 cup nut butter (almond, peanut, or cashew)
- 1/4 cup honey or maple syrup
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon vanilla extract
- A pinch of salt
Instructions
- In a mixing bowl, combine the oats, pumpkin puree, nut butter, honey or maple syrup, pumpkin pie spice, vanilla extract, and salt.
- Mix until well combined and the mixture is sticky.
- Use your hands to form small balls (about 1 inch in diameter) with the mixture.
- Place the energy bites on a parchment-lined baking sheet or plate.
- Refrigerate for at least 30 minutes to firm up.
- Enjoy as a healthy snack anytime!
