Delicious and nutritious energy bites made with pumpkin, oats, and nut butter, perfect for a healthy snack anytime.


Ingredients

  • 1 cup oats
  • 1/2 cup pumpkin puree
  • 1/4 cup nut butter (almond, peanut, or cashew)
  • 1/4 cup honey or maple syrup
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon vanilla extract
  • A pinch of salt

Instructions

  1. In a mixing bowl, combine the oats, pumpkin puree, nut butter, honey or maple syrup, pumpkin pie spice, vanilla extract, and salt.
  2. Mix until well combined and the mixture is sticky.
  3. Use your hands to form small balls (about 1 inch in diameter) with the mixture.
  4. Place the energy bites on a parchment-lined baking sheet or plate.
  5. Refrigerate for at least 30 minutes to firm up.
  6. Enjoy as a healthy snack anytime!
