Ingredients
1 3/4 cups all-purpose flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
2 tsp pumpkin pie spice
1 tsp cinnamon
1 cup pumpkin purée
1/2 cup brown sugar
1/2 cup granulated sugar
1/2 cup vegetable oil
2 large eggs
1 tsp vanilla extract
**Cream Cheese Swirl:**
6 oz cream cheese, softened
1/4 cup granulated sugar
1 egg yolk
1/2 tsp vanilla extract
Instructions
1. Preheat oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners.
2. In a large bowl, whisk together flour, baking soda, baking powder, salt, pumpkin pie spice, and cinnamon.
3. In another bowl, combine pumpkin purée, brown sugar, granulated sugar, oil, eggs, and vanilla until smooth.
4. Add the wet ingredients to the dry and stir just until combined (do not overmix).
5. In a small bowl, beat cream cheese, sugar, egg yolk, and vanilla until smooth.
6. Fill each muffin cup about 2/3 full with pumpkin batter.
7. Add 1 tablespoon of cream cheese mixture on top and use a toothpick or knife to swirl gently.
8. Bake for 18–22 minutes, or until a toothpick inserted in the center comes out clean.
9. Cool for 5 minutes in the pan, then transfer to a wire rack to finish cooling.
Notes
Store leftovers in an airtight container in the refrigerator for up to 5 days.
Warm slightly before serving for that fresh-baked taste.
For extra indulgence, sprinkle cinnamon sugar on top before baking!
