Ingredients

  • 1 cup pistachio cream
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup chocolate chips
  • 1/2 cup chopped pistachios

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the butter, brown sugar, and granulated sugar until smooth.
  3. Beat in the pistachio cream and eggs, mixing well after each addition.
  4. Stir in the vanilla extract.
  5. In another bowl, whisk together the flour, baking soda, and salt.
  6. Gradually mix the dry ingredients into the creamed mixture until just combined.
  7. Fold in chocolate chips and chopped pistachios.
  8. Drop spoonfuls of dough onto ungreased baking sheets, leaving space between each.
  9. Bake for 10-12 minutes until edges are lightly golden.
  10. Let cool on sheets for a few minutes before transferring to wire racks.

Notes

Chilling the cookie dough for at least 30 minutes can prevent excessive spreading.
