- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup fresh cilantro
- 1/2 cup mayonnaise
- 1/4 cup Greek yogurt
- 1 lime, juiced
- 1 jalapeño, seeded and chopped
- 2 garlic cloves
Instructions
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, drizzle the chicken breasts with olive oil. Sprinkle cumin, paprika, salt, and pepper over the chicken and rub the spices and oil all over.
- Place the seasoned chicken in a baking dish in a single layer and bake for 25-30 minutes or until fully cooked (165°F/75°C).
- While the chicken is baking, prepare the sauce by blending cilantro, mayonnaise, Greek yogurt, lime juice, jalapeño, and garlic in a food processor until smooth.
- After baking, let the chicken rest for a few minutes, then slice and serve with the creamy green sauce.
Notes
For extra flavor, marinate the chicken in the spice mixture for at least an hour. You can also customize the sauce by adjusting the spice levels to your liking.
