Description

Delightful and comforting Banana Nut Bread, perfect for breakfast, snacks, or dessert with a balance of moist banana goodness and crunchy nuts.

Ingredients

Scale
  • 0.5 cup unsalted butter, melted and cooled
  • 1 cup granulated sugar
  • 1 large egg, room temperature
  • 1 tsp pure vanilla extract
  • 1.5 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 1.5 cups mashed overripe bananas (about 34 large bananas)
  • 1 cup chopped walnuts or pecans, toasted
  • 0.5 tsp ground cinnamon (optional)

Instructions

  1. Toast the walnuts: Start by toasting the walnuts in a dry skillet over medium heat or in an oven until they become fragrant. Set aside to cool.
  2. Preheat the oven: Set your oven to 350°F (175°C). Grease a loaf pan and add parchment paper for easy removal.
  3. Mix wet ingredients: Combine the melted butter with granulated sugar in a bowl. Whisk until smooth, then beat in the egg and vanilla extract. Stir in the mashed bananas.
  4. Combine dry ingredients: In a separate bowl, sift together the flour, baking soda, salt, and optional cinnamon.
  5. Combine wet and dry mixtures: Gently fold the dry ingredients into the wet banana mixture until just combined.
  6. Add walnuts: Fold in ¾ cup of toasted walnuts and reserve ¼ cup for topping.
  7. Pour into pan: Pour the batter into the prepared loaf pan, smoothing the top. Sprinkle reserved walnuts on top.
  8. Bake: Bake for 55 to 65 minutes. Check for doneness with a toothpick.
  9. Cool: Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

For best results, use overripe bananas and do not skip toasting the nuts for enhanced flavor.
