- 1 cup granulated sugar
- 1 large egg, room temperature
- 1 tsp pure vanilla extract
- 1.5 cups all-purpose flour
- 1 tsp baking soda
- 0.5 tsp salt
- 1.5 cups mashed overripe bananas (about 3–4 large bananas)
- 1 cup chopped walnuts or pecans, toasted
- 0.5 tsp ground cinnamon (optional)
Instructions
- Toast the walnuts: Start by toasting the walnuts in a dry skillet over medium heat or in an oven until they become fragrant. Set aside to cool.
- Preheat the oven: Set your oven to 350°F (175°C). Grease a loaf pan and add parchment paper for easy removal.
- Mix wet ingredients: Combine the melted butter with granulated sugar in a bowl. Whisk until smooth, then beat in the egg and vanilla extract. Stir in the mashed bananas.
- Combine dry ingredients: In a separate bowl, sift together the flour, baking soda, salt, and optional cinnamon.
- Combine wet and dry mixtures: Gently fold the dry ingredients into the wet banana mixture until just combined.
- Add walnuts: Fold in ¾ cup of toasted walnuts and reserve ¼ cup for topping.
- Pour into pan: Pour the batter into the prepared loaf pan, smoothing the top. Sprinkle reserved walnuts on top.
- Bake: Bake for 55 to 65 minutes. Check for doneness with a toothpick.
- Cool: Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
For best results, use overripe bananas and do not skip toasting the nuts for enhanced flavor.
