Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake pan with cupcake liners.
- In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
- In another bowl, cream together the softened butter and cream cheese until smooth and fluffy.
- Add the eggs and vanilla extract to the butter and cream cheese mixture, mixing well to combine.
- Gradually add the dry ingredients to the wet mixture, mixing gently until just combined.
- Fold in the diced peaches, ensuring they are evenly distributed throughout the batter.
- Divide the cupcake batter evenly into the prepared liners, filling each about two-thirds full.
- Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cupcakes to cool completely before frosting.
- To make the frosting, beat the remaining cream cheese with powdered sugar until creamy and smooth. Frost the cooled cupcakes and add extra diced peaches on top for decoration if desired.
Notes
