Ingredients

  • 8 oz pasta (spaghetti or fettuccine)
  • 1 lb shrimp, peeled and deveined
  • 2 cups mixed vegetables (bell peppers, zucchini, carrots, broccoli)
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1/2 cup vegetable or chicken broth
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Parmesan cheese for serving (optional)

Instructions

  1. Cook the pasta according to package instructions. Be sure to salt the water for extra flavor. Once cooked, drain the pasta and set it aside.
  2. Sauté the garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté it for about 1 minute until it becomes fragrant but not browned.
  3. Add the mixed vegetables. Cook them for about 5 to 7 minutes, stirring occasionally, until they begin to soften.
  4. Cook the shrimp: Add the shrimp to the skillet with the vegetables. Cook for about 3 to 5 minutes, or until they are pink and opaque.
  5. Add the vegetable or chicken broth, followed by the Italian seasoning. Season with salt and pepper to taste. Stir well and bring to a gentle simmer.
  6. Combine the drained pasta with the skillet mixture. Toss everything together until the pasta is well coated and heated through.
  7. Serve the Pasta Primavera hot, topped with Parmesan cheese if desired.
