A delicious and easy one-pan meal featuring tender chicken breasts, crispy potatoes, and fresh green beans.

- 1 1/2 lb chicken breast (about 3–4 pieces, approx. 1 inch thick)
- 2 tablespoons olive oil (for chicken)
- 2 garlic cloves, minced (for chicken)
- 1/3 cup grated Parmesan cheese (for chicken)
- 1/3 cup breadcrumbs (Italian or plain)
- 1/2 teaspoon cracked pepper (for chicken)
- 1/2 – 3/4 teaspoon sea salt (for chicken)
- 2 lb red potatoes, cut into bite-sized pieces
- 1–2 garlic cloves, minced (for potatoes)
- 2 tablespoons olive oil (for potatoes)
- 2 tablespoons grated Parmesan cheese (for potatoes)
- Salt and pepper to taste (for potatoes)
- 1 lb fresh green beans, ends trimmed
- 1 tablespoon olive oil (for green beans)
- 1 garlic clove, minced (for green beans)
- 1 tablespoon Parmesan cheese (optional for green beans)
- Salt and pepper to taste (for green beans)
Instructions
- Preheat oven to 425°F (220°C).
- Line a sheet pan with parchment paper or spray with cooking oil.
- In a medium bowl, toss potatoes with 2 tablespoons olive oil, 1-2 minced garlic cloves, 2 tablespoons grated Parmesan cheese, and salt and pepper.
- Spread seasoned potatoes on one-third of the sheet pan and roast for 10-15 minutes.
- In another bowl, mix chicken with 2 tablespoons olive oil, 2 minced garlic cloves, 1/3 cup grated Parmesan cheese, 1/3 cup breadcrumbs, cracked pepper, and sea salt.
- Add chicken to the sheet pan after the potatoes have cooked for 10-15 minutes.
- Toss green beans with 1 tablespoon olive oil, 1 minced garlic clove, salt, pepper, and optional Parmesan cheese.
- Add green beans to the sheet pan with chicken and potatoes.
- Bake for about 25 minutes, checking that chicken reaches an internal temperature of 165°F (74°C).
- For crispy potatoes, broil for an additional 4-5 minutes if desired.
- Let cool for several minutes before serving.
Notes
Serve with a fresh green salad and extra Parmesan cheese on top. Pairs well with white wine or lemonade.
