A delightful and wholesome meal featuring juicy chicken, tender baby potatoes, and crisp green beans, all roasted in one pan for minimal cleanup.


Ingredients

  • 4 chicken thighs or breasts
  • 1 pound baby potatoes, halved
  • 1 pound green beans, trimmed
  • 3 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine 3 tablespoons of olive oil, 2 teaspoons of garlic powder, 1 teaspoon of dried thyme, 1 teaspoon of dried rosemary, and salt and pepper to taste in a large mixing bowl.
  3. Coat the 4 chicken thighs or breasts with the marinade.
  4. Arrange the coated chicken pieces in a baking dish and surround with the halved baby potatoes.
  5. Season the baby potatoes with extra salt and pepper.
  6. Bake for 25 minutes.
  7. Add the trimmed green beans to the baking dish and toss everything together.
  8. Continue roasting for an additional 15-20 minutes until chicken reaches 165°F (75°C) and potatoes are tender.
  9. Cool for a few minutes before serving.

Notes

For more flavor, marinate the chicken for a few hours or overnight. Feel free to swap the green beans for seasonal veggies.
