- 4 chicken thighs or breasts
- 1 pound baby potatoes, halved
- 1 pound green beans, trimmed
- 3 tablespoons olive oil
- 2 teaspoons garlic powder
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Combine 3 tablespoons of olive oil, 2 teaspoons of garlic powder, 1 teaspoon of dried thyme, 1 teaspoon of dried rosemary, and salt and pepper to taste in a large mixing bowl.
- Coat the 4 chicken thighs or breasts with the marinade.
- Arrange the coated chicken pieces in a baking dish and surround with the halved baby potatoes.
- Season the baby potatoes with extra salt and pepper.
- Bake for 25 minutes.
- Add the trimmed green beans to the baking dish and toss everything together.
- Continue roasting for an additional 15-20 minutes until chicken reaches 165°F (75°C) and potatoes are tender.
- Cool for a few minutes before serving.
Notes
For more flavor, marinate the chicken for a few hours or overnight. Feel free to swap the green beans for seasonal veggies.
