Description

Ingredients
2 cups all-purpose flour
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
3/4 cup granulated sugar
2 large eggs
1/2 cup vegetable oil or melted butter
3/4 cup fresh orange juice
1 tbsp orange zest
1 tsp vanilla extract
Optional: coarse sugar for topping
Instructions
1. Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
2. In a large bowl, whisk together flour, baking powder, baking soda, salt, and sugar.
3. In another bowl, whisk eggs, oil, orange juice, orange zest, and vanilla.
4. Add wet ingredients to dry ingredients and mix just until combined.
5. Divide batter evenly among muffin cups, filling about 3/4 full.
6. Optional: sprinkle tops with coarse sugar.
7. Bake for 18–22 minutes until tops are golden and a toothpick comes out clean.
8. Let muffins cool in pan for 5 minutes, then transfer to a wire rack.
Notes
Use freshly squeezed orange juice for the best flavor.
Do not overmix the batter to keep muffins soft and fluffy.
Add a simple orange glaze for extra sweetness if desired.
Store muffins in an airtight container for up to 3 days.
