- 2 tablespoons of vegetable oil
- 1 large onion (finely chopped)
- 4 cloves of garlic (minced)
- 1 tablespoon of ginger (grated)

- 1 cup of coconut milk (or plain yogurt)
- 2 tablespoons of curry powder
- 1 teaspoon of turmeric powder
- 1 teaspoon of cumin
- 1 teaspoon of coriander powder
- Salt to taste
- Fresh cilantro (for garnish)
- Red chili flakes or fresh chilies (optional, for heat)
Instructions
- Prepare the Ingredients: Cut the chicken into bite-sized pieces. Chop the onion, mince the garlic, and grate the ginger. Puree the tomatoes.
- Heat the Oil: In a large pot, heat the vegetable oil over medium heat.
- Cook the Onions: Add the chopped onions and sauté for 5-7 minutes until translucent and golden brown.
- Add Garlic and Ginger: Stir in the minced garlic and grated ginger; cook for another 1-2 minutes until fragrant.
- Incorporate the Spices: Add curry powder, turmeric, cumin, and coriander; stir together for about a minute.
- Mix in the Tomato Puree: Pour in the tomato puree and cook for about 5-6 minutes.
- Add the Chicken: Toss in the chicken pieces and cook for 5-7 minutes until browned.
- Pour in the Coconut Milk: Add coconut milk or yogurt and stir well.
- Season and Simmer: Sprinkle salt to taste and bring to a simmer for 15-20 minutes.
- Final Touches: Add red chili flakes or fresh chilies if desired.
- Garnish and Serve: Remove from heat and garnish with fresh cilantro.
Notes
For extra flavor, use boneless, skinless chicken thighs. Adjust spice levels and consider adding vegetables for nutrition.
