Ingredients

  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 cups mixed fresh vegetables (e.g., broccoli, bell peppers, zucchini)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion, sliced carrots, and sliced celery. Sauté until softened, about 5 minutes.
  3. Incorporate the minced garlic. Cook for about 1 minute, stirring constantly.
  4. Pour in the vegetable broth. Add the mixed vegetables, dried thyme, and dried basil. Stir well.
  5. Bring to a boil, then reduce heat and let it simmer for 15 minutes.
  6. Add the heavy cream, seasoning with salt and pepper to taste.
  7. Let it simmer for an additional 5 minutes.
  8. Serve warm, garnished with fresh parsley.
