Ingredients

  • 2 tablespoons Honey
  • 3 cloves Garlic (minced)
  • 2 tablespoons Soy Sauce
  • 1 each Bell Peppers (red & yellow)
  • 1 cup Baby Carrots
  • 1 pound Baby Potatoes
  • 2 tablespoons Olive Oil
  • 2 tablespoons Fresh Parsley or Green Onions

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Chop the Kielbasa into bite-sized pieces and slice the bell peppers.
  3. Combine honey, minced garlic, and soy sauce in a bowl.
  4. Combine chopped Kielbasa, sliced peppers, baby carrots, and baby potatoes on a baking sheet.
  5. Drizzle everything with olive oil and the honey garlic sauce, then toss to coat.
  6. Spread the mixture evenly across the baking sheet.
  7. Bake for 25-30 minutes, stirring halfway through.
  8. Garnish with fresh parsley or green onions before serving.
