Instructions
- Preheat the oven to 400°F (200°C).
- Chop the Kielbasa into bite-sized pieces and slice the bell peppers.
- Combine honey, minced garlic, and soy sauce in a bowl.
- Combine chopped Kielbasa, sliced peppers, baby carrots, and baby potatoes on a baking sheet.
- Drizzle everything with olive oil and the honey garlic sauce, then toss to coat.
- Spread the mixture evenly across the baking sheet.
- Bake for 25-30 minutes, stirring halfway through.
- Garnish with fresh parsley or green onions before serving.
