- 1 lb chicken breast (diced)
- 2 cups broccoli florets (fresh)
- 2 cups mushrooms (sliced)
- 1 small onion (chopped)
- 2 cloves garlic (minced)
- 2 tbsp low-sodium soy sauce
- 1 tbsp sesame oil
- 1 tbsp olive oil
- 1 tsp cornstarch
- 2 tbsp water
- Salt (to taste)
- Pepper (to taste)
Instructions
- Cook the rice according to the package instructions and set aside.
- Heat olive oil in a large skillet or wok over medium-high heat. Add the diced chicken, season, and cook until golden brown, about 5-7 minutes. Remove the chicken from the pan.
- Add sesame oil, onion, and garlic to the same skillet. Sauté for 1-2 minutes until fragrant.
- Toss in the broccoli and mushrooms and cook for 4-5 minutes until tender but crisp.
- Return the chicken to the pan and pour in the soy sauce, mixing thoroughly.
- Mix cornstarch with water to create a slurry, add to skillet, and cook for an additional 2 minutes.
- Serve the stir-fry hot over the cooked rice. Garnish with sesame seeds or green onions if desired.
Notes
For a vegetarian option, replace chicken with tofu or chickpeas. Add different vegetables to customize the dish.
