Description

A quick and flavorful stir-fry featuring tender chicken, broccoli, and mushrooms, perfect for busy weeknights.


Ingredients

  • 1 lb chicken breast (diced)
  • 2 cups broccoli florets (fresh)
  • 2 cups mushrooms (sliced)
  • 1 small onion (chopped)
  • 2 cloves garlic (minced)
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp olive oil
  • 1 tsp cornstarch
  • 2 tbsp water
  • Salt (to taste)
  • Pepper (to taste)

Instructions

  1. Cook the rice according to the package instructions and set aside.
  2. Heat olive oil in a large skillet or wok over medium-high heat. Add the diced chicken, season, and cook until golden brown, about 5-7 minutes. Remove the chicken from the pan.
  3. Add sesame oil, onion, and garlic to the same skillet. Sauté for 1-2 minutes until fragrant.
  4. Toss in the broccoli and mushrooms and cook for 4-5 minutes until tender but crisp.
  5. Return the chicken to the pan and pour in the soy sauce, mixing thoroughly.
  6. Mix cornstarch with water to create a slurry, add to skillet, and cook for an additional 2 minutes.
  7. Serve the stir-fry hot over the cooked rice. Garnish with sesame seeds or green onions if desired.

Notes

For a vegetarian option, replace chicken with tofu or chickpeas. Add different vegetables to customize the dish.
