- 1 cup granulated sugar
- 2 large eggs, room temperature
- 1 tsp pure vanilla extract
- 1.5 cups all-purpose flour
- 1 tsp baking soda
- 0.5 tsp salt
- 1 cup mashed ripe bananas (about 3 very ripe bananas)
- 0.5 cup chopped walnuts or pecans (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan thoroughly.
- Cream the softened butter and granulated sugar together until light and fluffy.
- Add the eggs one at a time, beating well after each addition.
- Stir in the vanilla extract and mashed ripe bananas until smooth.
- Whisk together the flour, baking soda, and salt in a separate bowl.
- Fold the dry mixture into the wet mixture until just combined.
- Optionally, fold in the chopped walnuts or pecans.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 55-65 minutes. Check for doneness with a toothpick.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
For an extra flavor boost, consider adding a teaspoon of cinnamon or chocolate chips.
