  • 2 large eggs, room temperature
  • 1 tsp pure vanilla extract
  • 1.5 cups all-purpose flour
  • 1 tsp baking soda

  • 1 cup mashed ripe bananas (about 3 very ripe bananas)
  • 0.5 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan thoroughly.
  2. Cream the softened butter and granulated sugar together until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition.
  4. Stir in the vanilla extract and mashed ripe bananas until smooth.
  5. Whisk together the flour, baking soda, and salt in a separate bowl.
  6. Fold the dry mixture into the wet mixture until just combined.
  7. Optionally, fold in the chopped walnuts or pecans.
  8. Pour the batter into the prepared loaf pan and smooth the top.
  9. Bake for 55-65 minutes. Check for doneness with a toothpick.
  10. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes
