Ingredients
1 cup unsalted butter
1/2 cup brown sugar, packed
1 teaspoon vanilla extract
3 cups quick-cooking oats
1 cup semisweet chocolate chips
1/2 cup creamy peanut butter
Instructions
1. In a medium saucepan, melt butter and brown sugar over medium heat.
2. Stir in vanilla extract and oats; cook for 2–3 minutes until well combined.
3. Press half of the oat mixture into a greased or parchment-lined 8×8-inch pan.
4. In a microwave-safe bowl, melt chocolate chips and peanut butter together until smooth.
5. Pour chocolate mixture over the oat layer, spread evenly, and top with the remaining oats.
6. Refrigerate for 2–3 hours or until firm.
7. Cut into bars and enjoy!
Notes
Add a sprinkle of sea salt on top for a gourmet touch.
Use almond butter or sunflower seed butter for a nut-free version.
These bars store well in the fridge for up to a week or can be frozen for up to 2 months.
