- 9 lasagna noodles
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 zucchini, chopped
- 1 bell pepper, chopped
- 2 cups spinach
- 3 cups marinara sauce
- 2 cups ricotta cheese
- 2 cups mozzarella cheese, shredded
- 1/2 cup Parmesan cheese, grated
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions.
- Heat olive oil in a pan over medium heat. Add onion and garlic and sauté until fragrant.
- Add zucchini and bell pepper, cooking until softened. Stir in spinach until wilted.
- Spread a layer of marinara sauce on the bottom of a baking dish.
- Layer with 3 lasagna noodles, half of the ricotta, half of the sautéed vegetables, and a sprinkle of mozzarella.
- Repeat the layering process, finishing with sauce and remaining mozzarella on top.
- Sprinkle Parmesan cheese and dried herbs over the top.
- Bake for 45 minutes until bubbly and golden.
- Let cool for 10 minutes before slicing and serving.
