Ingredients

  • 2 to 3 ripe bananas, mashed
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mash the ripe bananas in a mixing bowl until smooth.
  3. Add the melted butter to the mashed bananas.
  4. Mix in the baking soda and a pinch of salt.
  5. Incorporate the sugar, beaten egg, and vanilla extract.
  6. Add the all-purpose flour gradually and mix until just combined.
  7. Prepare a muffin tin by greasing it or lining it with muffin liners.
  8. Fill each muffin cup about two-thirds full with batter.
  9. Bake for 18-20 minutes until a toothpick comes out clean.
  10. Cool the muffins in the tin for a few minutes, then transfer to a wire rack.
