- 4 chicken breasts
- Salt, to taste
- Pepper, to taste
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 8 ounces mushrooms, sliced
- 4 cups fresh spinach
- 1 cup heavy cream
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
Instructions
- Preheat your oven to 375°F (190°C).
- Grease a baking dish lightly with olive oil or cooking spray.
- Season chicken breasts with salt and pepper.
- In a skillet over medium heat, add olive oil. Sauté minced garlic and sliced mushrooms for 5-7 minutes.
- Add fresh spinach to the skillet and cook until wilted.
- Place seasoned chicken breasts in the prepared baking dish and spread the spinach and mushroom mixture over them.
- Pour heavy cream over the chicken and top with mozzarella and Parmesan cheese.
- Bake for 25-30 minutes until the chicken reaches an internal temperature of 165°F and the top is golden.
- Let the dish rest for a few minutes before serving.
