Ingredients

  • 8 oz spaghetti
  • 1 lb shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 1/4 cup olive oil
  • 1 lemon, juiced and zested
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Cook the spaghetti: Boil water in a large pot, add salt and spaghetti. Cook until al dente, about 8 to 10 minutes. Drain without rinsing.
  2. Heat the olive oil in a large skillet over medium heat.
  3. Sauté the garlic for about 1 minute, stirring continuously to avoid burning.
  4. Cook the shrimp until pink and opaque, about 3-4 minutes.
  5. Add lemon juice, lemon zest, salt, and pepper. Mix well to coat shrimp.
  6. Combine the cooked spaghetti with the shrimp mixture, using tongs to mix evenly.
  7. Garnish with fresh chopped parsley before serving.

Notes

Serve with a side salad or a glass of white wine for a complete meal. Store leftovers in an airtight container in the fridge for up to 2 days.
