- 8 oz spaghetti
- 1 lb shrimp, peeled and deveined
- 4 cloves garlic, minced
- 1/4 cup olive oil
- 1 lemon, juiced and zested
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
Instructions
- Cook the spaghetti: Boil water in a large pot, add salt and spaghetti. Cook until al dente, about 8 to 10 minutes. Drain without rinsing.
- Heat the olive oil in a large skillet over medium heat.
- Sauté the garlic for about 1 minute, stirring continuously to avoid burning.
- Cook the shrimp until pink and opaque, about 3-4 minutes.
- Add lemon juice, lemon zest, salt, and pepper. Mix well to coat shrimp.
- Combine the cooked spaghetti with the shrimp mixture, using tongs to mix evenly.
- Garnish with fresh chopped parsley before serving.
Notes
Serve with a side salad or a glass of white wine for a complete meal. Store leftovers in an airtight container in the fridge for up to 2 days.
