Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup orzo pasta
  • 4 cups chicken broth
  • 2 cups fresh spinach
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Parmesan cheese for serving (optional)

Instructions

  1. Heat the olive oil in a large pot or skillet over medium heat.
  2. Season the chicken breasts with salt and pepper, then add them to the pot and cook until browned and cooked through, about 5-7 minutes per side. Remove the chicken and set it aside.
  3. Add minced garlic to the same pot and sauté for about 30 seconds until fragrant.
  4. Add the orzo and chicken broth, stirring to combine.
  5. Bring the mixture to a boil, then reduce the heat and let it simmer for 10 minutes, stirring occasionally.
  6. Stir in the spinach and cook until wilted, about 2 minutes.
  7. Return the chicken to the pot, add lemon juice, and stir to combine.
  8. Serve warm, topped with Parmesan cheese if desired.

Notes

Leftovers can be stored in an airtight container for up to 3 days. Reheat with a splash of chicken broth or water.
