- 2 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup orzo pasta
- 4 cups chicken broth
- 2 cups fresh spinach
- Juice of 1 lemon
- Salt and pepper to taste
- Parmesan cheese for serving (optional)
Instructions
- Heat the olive oil in a large pot or skillet over medium heat.
- Season the chicken breasts with salt and pepper, then add them to the pot and cook until browned and cooked through, about 5-7 minutes per side. Remove the chicken and set it aside.
- Add minced garlic to the same pot and sauté for about 30 seconds until fragrant.
- Add the orzo and chicken broth, stirring to combine.
- Bring the mixture to a boil, then reduce the heat and let it simmer for 10 minutes, stirring occasionally.
- Stir in the spinach and cook until wilted, about 2 minutes.
- Return the chicken to the pot, add lemon juice, and stir to combine.
- Serve warm, topped with Parmesan cheese if desired.
Notes
Leftovers can be stored in an airtight container for up to 3 days. Reheat with a splash of chicken broth or water.
