Description

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup sugar
  • 3 large eggs
  • 1/4 cup sour cream
  • 1/4 cup fresh lemon juice
  • 1 tsp lemon zest
  • 1 cup fresh blueberries

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Combine the graham cracker crumbs, sugar, and melted butter in a bowl. Mix well and press into the bottom of a springform pan to form a crust.
  3. Beat the cream cheese until smooth. Gradually add sugar and mix until well combined.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Stir in sour cream, lemon juice, and lemon zest until smooth.
  6. Fold in the blueberries gently to avoid breaking them.
  7. Pour the cheesecake filling over the crust and spread it evenly.
  8. Bake for 50-60 minutes, until the center has a slight jiggle.
  9. Cool in the oven for about an hour. Chill in the refrigerator for at least 4 hours before serving.
