Ingredients

  • 1½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • 6 tablespoons melted butter
  • 16 oz cream cheese, softened
  • ½ cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 2 large eggs
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Prepare an 8×8 inch baking pan with parchment paper.
  3. Make the crust by mixing graham cracker crumbs, ¼ cup sugar, and melted butter.
  4. Press the mixture into the bottom of the prepared pan.
  5. Bake the crust for about 10 minutes.
  6. Let the crust cool.
  7. Make the cheesecake filling by beating softened cream cheese until smooth.
  8. Add ½ cup granulated sugar and 2 tablespoons flour, mixing until blended.
  9. Add the eggs, one at a time, mixing well after each addition.
  10. Add lemon juice, lemon zest, and vanilla extract; mix until combined.
  11. Fold in the blueberries gently.
  12. Pour the cheesecake mixture over the cooled crust and spread evenly.
  13. Bake for 35-40 minutes until edges are set.
  14. Cool to room temperature, then refrigerate for at least 4 hours.
  15. Cut into squares and serve.

Notes

For best flavor, chill overnight before serving. Using fresh blueberries enhances both taste and appearance.
