- 1½ cups graham cracker crumbs
- ¼ cup granulated sugar
- 6 tablespoons melted butter
- 16 oz cream cheese, softened
- ½ cup granulated sugar
- 2 tablespoons all-purpose flour
- 2 large eggs
- 2 tablespoons lemon juice
- 1 teaspoon lemon zest
- 1 teaspoon vanilla extract
- 1 cup fresh or frozen blueberries
Instructions
- Preheat the oven to 325°F (163°C).
- Prepare an 8×8 inch baking pan with parchment paper.
- Make the crust by mixing graham cracker crumbs, ¼ cup sugar, and melted butter.
- Press the mixture into the bottom of the prepared pan.
- Bake the crust for about 10 minutes.
- Let the crust cool.
- Make the cheesecake filling by beating softened cream cheese until smooth.
- Add ½ cup granulated sugar and 2 tablespoons flour, mixing until blended.
- Add the eggs, one at a time, mixing well after each addition.
- Add lemon juice, lemon zest, and vanilla extract; mix until combined.
- Fold in the blueberries gently.
- Pour the cheesecake mixture over the cooled crust and spread evenly.
- Bake for 35-40 minutes until edges are set.
- Cool to room temperature, then refrigerate for at least 4 hours.
- Cut into squares and serve.
Notes
For best flavor, chill overnight before serving. Using fresh blueberries enhances both taste and appearance.
