Ingredients

  • 2 large eggs
  • 1 cup granulated sugar
  • 1/4 cup lemon juice
  • Zest of 1 lemon

  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the all-purpose flour and powdered sugar in a mixing bowl.
  3. Cut in the softened unsalted butter until the mixture resembles coarse crumbs.
  4. Press the mixture firmly into the bottom of a greased 9×9-inch baking dish.
  5. Bake the crust for about 15 minutes or until lightly golden.
  6. Whisk the eggs in a separate bowl and then add the granulated sugar, lemon juice, lemon zest, and baking powder.
  7. Mix all these ingredients together until smooth.
  8. Pour the lemon mixture over the hot crust, spreading it evenly.
  9. Bake for an additional 20 minutes, until the filling is set and slightly firm.
  10. Cool in the baking dish, then dust with powdered sugar and cut into squares for serving.
