Instructions
- Preheat your oven to 350°F (175°C).
- Combine the all-purpose flour and powdered sugar in a mixing bowl.
- Cut in the softened unsalted butter until the mixture resembles coarse crumbs.
- Press the mixture firmly into the bottom of a greased 9×9-inch baking dish.
- Bake the crust for about 15 minutes or until lightly golden.
- Whisk the eggs in a separate bowl and then add the granulated sugar, lemon juice, lemon zest, and baking powder.
- Mix all these ingredients together until smooth.
- Pour the lemon mixture over the hot crust, spreading it evenly.
- Bake for an additional 20 minutes, until the filling is set and slightly firm.
- Cool in the baking dish, then dust with powdered sugar and cut into squares for serving.
