Description

Tangy lemon filling with a buttery crust, perfect for gatherings and sunny days.


Ingredients

  • 2 cups graham cracker crumbs
  • 1 cup melted butter
  • 1 cup sugar
  • 1/4 cup lemon juice
  • 2 eggs
  • 1 teaspoon lemon zest
  • 1 teaspoon baking powder

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the graham cracker crumbs and melted butter in a mixing bowl until fully coated. Press into the bottom of a greased baking dish to form a crust.
  3. Whisk together sugar, lemon juice, eggs, lemon zest, and baking powder until smooth.
  4. Pour the lemon filling over the crust, spreading evenly.
  5. Bake for 20-25 minutes, until filling is set but slightly jiggly in the center.
  6. Remove from oven and let cool completely before cutting into squares. Dust with powdered sugar before serving.

Notes

Best served chilled. Can be garnished with a lemon slice or mint leaves.
