- 1 cup Guinness stout
- 1 cup unsweetened cocoa powder
- 1 3/4 cups all-purpose flour
- 2 cups granulated sugar
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 1 cup unsalted butter, softened
- 2 large eggs
- 1 tablespoon vanilla extract
- 1/2 cup brewed espresso
- 1 cup heavy cream
- 4 ounces cream cheese
- Powdered sugar to taste
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- Bring the Guinness and cocoa powder to a simmer in a saucepan over medium heat. Remove from heat and let cool slightly.
- Whisk together the flour, sugar, baking soda, and salt in a separate bowl.
- Stir the melted butter into the cooled Guinness mixture, then add the eggs, vanilla extract, and brewed espresso.
- Add the dry ingredients to the wet ingredients, mixing until just combined.
- Divide the batter evenly between the two prepared cake pans. Bake for 30-35 minutes, checking with a toothpick.
- Let the cakes cool in the pans for about 10 minutes before turning them out onto wire racks.
- Beat the heavy cream and cream cheese together until smooth. Gradually add powdered sugar to taste.
- Layer the cooled cakes with frosting in between and on top, decorating as desired.
Notes
Let ingredients reach room temperature for better mixing. Sift cocoa powder to prevent lumps and avoid overmixing the batter.
