- 2 cups finely ground graham cracker crumbs
- 2 tablespoons granulated sugar
- 1/2 teaspoon kosher salt
- 6 tablespoons unsalted butter, melted
- 1 1/2 cups sweetened condensed milk
- 1 1/2 tablespoons Key lime zest
- 1/2 cup fresh Key lime juice
- 4 large egg yolks
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon kosher salt
- 1 1/2 cups cold heavy whipping cream
- 6 tablespoons confectioners’ sugar
- 1/2 teaspoon vanilla extract
- Garnish: Key lime slices
Instructions
- Preheat the oven to 350°F (175°C).
- Mix the graham cracker crumbs, granulated sugar, and kosher salt in a medium bowl. Pour in the melted butter and stir until moistened.
- Press the mixture firmly into the bottom and sides of a 9-inch pie plate.
- Bake the crust for 8 to 10 minutes or until lightly golden. Allow it to cool completely.
- Whisk together the sweetened condensed milk, Key lime zest, Key lime juice, egg yolks, and vanilla extract in a large mixing bowl until smooth.
- Pour the Key lime filling into the cooled crust and spread it out evenly.
- Bake the pie for 10 to 12 minutes. The filling should be set but slightly jiggly in the center.
- Cool the pie at room temperature for about 30 minutes.
- Chill the pie in the refrigerator for at least 2 hours.
- Beat the heavy whipping cream with medium speed. Gradually add the confectioners’ sugar and vanilla extract, then beat until soft peaks form.
- Spread the whipped cream on top of the pie.
- Garnish with fresh Key lime slices.
Notes
For best flavor, use fresh Key limes. This pie can be made a day in advance and tastes even better after a couple of days.
