Description

Ingredients

  • 2 cups finely ground graham cracker crumbs
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon kosher salt
  • 6 tablespoons unsalted butter, melted
  • 1 1/2 cups sweetened condensed milk
  • 1 1/2 tablespoons Key lime zest
  • 1/2 cup fresh Key lime juice
  • 4 large egg yolks
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon kosher salt
  • 1 1/2 cups cold heavy whipping cream
  • 6 tablespoons confectioners’ sugar
  • 1/2 teaspoon vanilla extract
  • Garnish: Key lime slices

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix the graham cracker crumbs, granulated sugar, and kosher salt in a medium bowl. Pour in the melted butter and stir until moistened.
  3. Press the mixture firmly into the bottom and sides of a 9-inch pie plate.
  4. Bake the crust for 8 to 10 minutes or until lightly golden. Allow it to cool completely.
  5. Whisk together the sweetened condensed milk, Key lime zest, Key lime juice, egg yolks, and vanilla extract in a large mixing bowl until smooth.
  6. Pour the Key lime filling into the cooled crust and spread it out evenly.
  7. Bake the pie for 10 to 12 minutes. The filling should be set but slightly jiggly in the center.
  8. Cool the pie at room temperature for about 30 minutes.
  9. Chill the pie in the refrigerator for at least 2 hours.
  10. Beat the heavy whipping cream with medium speed. Gradually add the confectioners’ sugar and vanilla extract, then beat until soft peaks form.
  11. Spread the whipped cream on top of the pie.
  12. Garnish with fresh Key lime slices.

Notes

For best flavor, use fresh Key limes. This pie can be made a day in advance and tastes even better after a couple of days.
