Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 cup cherry tomatoes, halved
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup fresh basil leaves, chopped
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat until hot but not smoking.
  2. Pat chicken dry and season with salt and pepper.
  3. Cook chicken in the skillet for 5-7 minutes on each side until browned and cooked through.
  4. Remove chicken from skillet and cover with foil to keep warm.
  5. Add cherry tomatoes to the same skillet and cook for 3-4 minutes until softened.
  6. Pour in the heavy cream and stir until it simmers.
  7. Add shredded mozzarella cheese and chopped basil, stirring until melted and smooth.
  8. Return chicken to the skillet, coating it with the sauce, and heat through for another minute.
  9. Serve hot, optionally garnished with fresh basil or grated parmesan cheese.
