Ingredients

- 2 cups of mixed fresh vegetables (e.g., bell peppers, broccoli, zucchini)
- 1 pound of tender meat (e.g., chicken, beef, or shrimp)
- 2 tablespoons of olive oil or coconut oil
- 2–3 tablespoons of soy sauce or tamari
- 1 teaspoon of garlic powder
- 1 teaspoon of ginger powder
- Salt and pepper to taste
- Optional toppings: sesame seeds, green onions
Instructions
- Heat the olive oil or coconut oil in a large skillet or wok over medium-high heat.
- Add your chosen meat and cook until brown and fully cooked through, about 4-5 minutes.
- Add the mixed fresh vegetables and stir-fry for about 5-7 minutes until tender-crisp.
- Stir in the soy sauce or tamari, garlic powder, ginger powder, salt, and pepper, mixing well.
- Cook for an additional 2-3 minutes to ensure everything is heated through.
- Serve hot, garnished with sesame seeds and chopped green onions if desired.
Notes
Best served over cauliflower rice for a filling meal. Leftovers can be stored in an airtight container for up to 3 days.
