Description

A hearty low-carb casserole combining tender chicken, cream cheese, and mushrooms, topped with melted mozzarella.


Ingredients

  • 1 lb chicken breast, diced
  • 8 oz mushrooms, sliced
  • 4 oz cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 1 cup chicken broth
  • 2 cloves garlic, minced
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté until fragrant.
  3. Add the diced chicken to the skillet and cook until browned (about 5-7 minutes).
  4. Stir in the sliced mushrooms and cook until soft (about 3-4 minutes).
  5. In a separate bowl, mix together cream cheese, chicken broth, garlic powder, onion powder, salt, and pepper until smooth.
  6. Pour this mixture over the cooked chicken and mushrooms, stirring to combine.
  7. Transfer to a baking dish, spread evenly, and sprinkle mozzarella cheese on top.
  8. Bake for 25-30 minutes until the cheese is bubbly and golden brown.
  9. Garnish with fresh parsley before serving.
