A hearty low-carb casserole combining tender chicken, cream cheese, and mushrooms, topped with melted mozzarella.

- 1 lb chicken breast, diced
- 8 oz mushrooms, sliced
- 4 oz cream cheese, softened
- 1 cup shredded mozzarella cheese
- 1 cup chicken broth
- 2 cloves garlic, minced
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
- 2 tbsp olive oil
- Fresh parsley for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté until fragrant.
- Add the diced chicken to the skillet and cook until browned (about 5-7 minutes).
- Stir in the sliced mushrooms and cook until soft (about 3-4 minutes).
- In a separate bowl, mix together cream cheese, chicken broth, garlic powder, onion powder, salt, and pepper until smooth.
- Pour this mixture over the cooked chicken and mushrooms, stirring to combine.
- Transfer to a baking dish, spread evenly, and sprinkle mozzarella cheese on top.
- Bake for 25-30 minutes until the cheese is bubbly and golden brown.
- Garnish with fresh parsley before serving.
