- 1 pound chicken breast, cut into bite-sized pieces
- 1 cup unsalted cashews
- 1 bell pepper, diced
- 1 cup broccoli florets
- 3 tablespoons soy sauce or coconut aminos
- 2 tablespoons sesame oil
- 2 cloves garlic, minced
- 1 inch ginger, minced
- Salt and pepper to taste
- Green onions, chopped (for garnish)
Instructions
- Heat sesame oil in a large skillet over medium heat.
- Add chicken pieces and sauté for 5-7 minutes until browned and cooked through.
- Stir in minced garlic and ginger, cooking for another minute until fragrant.
- Add diced bell pepper and broccoli florets, cooking for 3-4 minutes until tender.
- Mix in unsalted cashews and soy sauce or coconut aminos; stir to combine.
- Season with salt and pepper to taste.
- Cook for an additional couple of minutes until heated through.
- Garnish with chopped green onions before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to a month.
