Instructions
- Trim excess fat from the chicken thighs and season with salt, pepper, and smoked paprika.
- Heat olive oil in a large pan over medium-high heat, then add the seasoned chicken thighs.
- Sear the chicken for about 5-7 minutes on each side until golden brown and fully cooked; remove and set aside.
- Add minced garlic, ginger, chopped onion, and diced bell pepper to the same pan; sauté for about 5 minutes until softened.
- Add jasmine rice, stirring to absorb the flavors, then pour in chicken stock and bring to a boil.
- Reduce heat to low, cover, and simmer for 15-20 minutes until rice is cooked and liquid is absorbed.
- Return cooked chicken to the pan, cover, and let rest for 5 minutes to meld flavors.
- Fluff rice gently with a fork, mix in the chicken, and garnish with fresh herbs before serving.
Notes
For a vegetarian version, replace chicken with chickpeas or tofu and use vegetable stock. Customize with spices for a unique flavor.
