  • 1 medium onion, chopped
  • 1 bell pepper, diced
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh herbs (like parsley or cilantro) for garnish

Instructions

  1. Trim excess fat from the chicken thighs and season with salt, pepper, and smoked paprika.
  2. Heat olive oil in a large pan over medium-high heat, then add the seasoned chicken thighs.
  3. Sear the chicken for about 5-7 minutes on each side until golden brown and fully cooked; remove and set aside.
  4. Add minced garlic, ginger, chopped onion, and diced bell pepper to the same pan; sauté for about 5 minutes until softened.
  5. Add jasmine rice, stirring to absorb the flavors, then pour in chicken stock and bring to a boil.
  6. Reduce heat to low, cover, and simmer for 15-20 minutes until rice is cooked and liquid is absorbed.
  7. Return cooked chicken to the pan, cover, and let rest for 5 minutes to meld flavors.
  8. Fluff rice gently with a fork, mix in the chicken, and garnish with fresh herbs before serving.

Notes
