- 1 and 1/2 cups all-purpose flour

- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup sour cream
- 1 cup crushed pineapple, well-drained
- 1/2 cup icing sugar
- 2 tbsp pineapple juice
Instructions
- Preheat your oven to 350°F (175°C).
- Grease and flour a 9-inch round cake pan.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a large bowl, cream the softened butter with the granulated sugar until light and fluffy.
- Beat in the eggs, one at a time, followed by the vanilla extract.
- Gently fold in the sour cream.
- Gradually add the dry ingredients into the wet mixture, mixing gently.
- Carefully fold in the drained crushed pineapple.
- Pour the batter into the prepared pan and spread evenly.
- Bake for 30-35 minutes or until a toothpick inserted comes out clean.
- While the cake bakes, whisk together the powdered sugar and pineapple juice until smooth.
- Allow the cake to cool before glazing and enjoy!
Notes
Make sure the crushed pineapple is well-drained to avoid a soggy cake. For an extra touch, add fresh pineapple slices or toasted coconut on top for decoration.
