  • 1 cup crushed pineapple, well-drained
  • 1/2 cup icing sugar
  • 2 tbsp pineapple juice

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour a 9-inch round cake pan.
  3. In a medium bowl, whisk together the flour, baking powder, and salt.
  4. In a large bowl, cream the softened butter with the granulated sugar until light and fluffy.
  5. Beat in the eggs, one at a time, followed by the vanilla extract.
  6. Gently fold in the sour cream.
  7. Gradually add the dry ingredients into the wet mixture, mixing gently.
  8. Carefully fold in the drained crushed pineapple.
  9. Pour the batter into the prepared pan and spread evenly.
  10. Bake for 30-35 minutes or until a toothpick inserted comes out clean.
  11. While the cake bakes, whisk together the powdered sugar and pineapple juice until smooth.
  12. Allow the cake to cool before glazing and enjoy!

Notes
