Ingredients

  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup honey or maple syrup
  • 1/4 cup melted coconut oil
  • 1 tsp vanilla extract
  • 2 large eggs
  • 1/2 cup almond flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8×8 inch baking pan or line it with parchment paper.
  2. Blend the cottage cheese, cocoa powder, honey or maple syrup, melted coconut oil, vanilla extract, and eggs in a blender until smooth.
  3. Combine the almond flour, baking powder, and salt in a separate mixing bowl.
  4. Mix the wet mixture with the dry ingredients until just combined.
  5. Spread the batter evenly in the prepared baking pan.
  6. Bake for 25-30 minutes, checking for doneness with a toothpick.
  7. Cool for 10-15 minutes before cutting into squares and serving.
