- 1 cup cottage cheese
- 1/2 cup unsweetened cocoa powder
- 1/2 cup honey or maple syrup
- 1/4 cup melted coconut oil
- 1 tsp vanilla extract
- 2 large eggs
- 1/2 cup almond flour
- 1/2 tsp baking powder
- 1/4 tsp salt
Instructions
- Preheat the oven to 350°F (175°C) and grease an 8×8 inch baking pan or line it with parchment paper.
- Blend the cottage cheese, cocoa powder, honey or maple syrup, melted coconut oil, vanilla extract, and eggs in a blender until smooth.
- Combine the almond flour, baking powder, and salt in a separate mixing bowl.
- Mix the wet mixture with the dry ingredients until just combined.
- Spread the batter evenly in the prepared baking pan.
- Bake for 25-30 minutes, checking for doneness with a toothpick.
- Cool for 10-15 minutes before cutting into squares and serving.
