Ingredients
1 package Trader Joe’s Ricotta & Lemon Zest Ravioli
2 tbsp olive oil
2 garlic cloves, minced
1/2 cup cherry tomatoes, halved
1/4 cup spinach or arugula
1/4 cup heavy cream (or substitute with half-and-half)
1 tbsp butter
Salt and black pepper to taste
1/4 cup grated Parmesan
Fresh basil for garnish
Instructions
1. Cook ravioli according to package instructions, then drain and set aside.
2. In a skillet, heat olive oil and butter over medium heat. Add garlic and sauté for 1 minute until fragrant.
3. Add cherry tomatoes and cook for 3–4 minutes until softened and slightly blistered.
4. Pour in heavy cream and season with salt and black pepper.
5. Toss the cooked ravioli in the sauce until coated.
6. Add spinach or arugula and stir until just wilted.
7. Sprinkle Parmesan and fresh basil over the top before serving.
Notes
Add a squeeze of lemon juice for extra brightness.
For a lighter version, skip the cream and toss with olive oil and lemon zest instead.
Pair with a side salad or garlic bread for a complete meal.
