Ingredients
12 oz penne pasta
1 tbsp olive oil
1 lb chicken breast, cut into bite-size pieces
1 small onion, diced
3 garlic cloves, minced
1 cup bell peppers, sliced (red, yellow, or green)
1/2 cup zucchini, sliced
1/2 cup vodka
1 can (15 oz) crushed tomatoes
1 cup heavy cream
1/2 tsp red pepper flakes (optional)
1/2 tsp Italian seasoning
Salt and black pepper to taste
1/2 cup grated Parmesan cheese
Fresh basil for garnish
Instructions
1. Cook pasta in salted water according to package directions until al dente; drain and set aside.
2. In a large skillet, heat olive oil over medium heat and sauté onion and garlic until fragrant.
3. Add chicken pieces, season with salt and pepper, and cook until lightly browned and cooked through.
4. Stir in bell peppers and zucchini; cook for 3–4 minutes until slightly tender.
5. Pour in vodka and simmer for 2–3 minutes to let the alcohol cook off.
