1 tsp vanilla extract

1/2 cup hot coffee or hot water

For the Dark Chocolate Mousse:

6 oz dark chocolate, chopped

1 cup heavy cream

For the Milk Chocolate Mousse:

6 oz milk chocolate, chopped

1 cup heavy cream

For the White Chocolate Mousse:

6 oz white chocolate, chopped

1 cup heavy cream


Instructions

1. Preheat oven to 350°F (175°C). Line the bottom of a 9-inch springform pan with parchment paper.

2. In a bowl, whisk together flour, sugar, cocoa powder, baking soda, and salt.

3. Add buttermilk, oil, egg, vanilla, and hot coffee; mix until smooth.

4. Pour batter into prepared pan and bake for 18–20 minutes, until set. Cool completely.

5. For the dark chocolate mousse, heat 1/2 cup cream until steaming, pour over dark chocolate, and stir until smooth. Cool slightly.

6. Whip remaining 1/2 cup cream to soft peaks and gently fold into chocolate mixture. Spread over cake and refrigerate 20 minutes.

7. Repeat the same process for the milk chocolate mousse, spreading gently over the dark layer. Chill 20 minutes.

8. Repeat again with the white chocolate mousse, spreading evenly on top.

9. Refrigerate the entire cake for at least 4 hours or overnight until fully set.

10. Carefully remove from the springform pan, slice, and serve chilled.
