This Roasted Cherry Flatbread with Goat Cheese is a stunning mix of sweet, savory, and tangy — perfect for summer gatherings or an elegant appetizer. Juicy roasted cherries, creamy goat cheese, and fresh herbs come together on a crisp, golden flatbread that’s pure perfection.
Ingredients
1 store-bought flatbread or naan (or homemade)
1 cup fresh cherries, pitted and halved
1 tbsp olive oil
1 tsp balsamic vinegar
1/2 cup crumbled goat cheese
1/4 cup ricotta cheese (optional for creaminess)
1 tsp honey
Fresh thyme or basil leaves
Salt and black pepper to taste
Balsamic glaze for drizzling
Instructions
1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. Toss cherries with olive oil, balsamic vinegar, salt, and pepper. Roast for 10–12 minutes until juicy and slightly caramelized.
3. Place the flatbread on the baking sheet and spread ricotta (if using) evenly on top.
4. Top with roasted cherries and crumbled goat cheese.
5. Bake for 8–10 minutes, or until the edges are golden and cheese is lightly melted.
6. Drizzle with honey and balsamic glaze.
7. Sprinkle fresh thyme or basil leaves before serving.
8. Slice and enjoy warm or at room temperature.
Notes
Use a mix of sweet and tart cherries for a flavor balance.
Try blue cheese instead of goat cheese for a bolder twist.
Add prosciutto or arugula for a gourmet touch.
Makes an amazing appetizer, light dinner, or brunch addition.
