This pear and gorgonzola flatbread is a perfect harmony of sweet, salty, and savory — with crisp crust, juicy pears, tangy blue cheese, and a drizzle of honeyed balsamic glaze. A restaurant-worthy appetizer made effortlessly at home.
Ingredients
1 flatbread or pizza crust (store-bought or homemade)
1 ripe pear, thinly sliced
1/2 cup crumbled gorgonzola cheese
1/2 cup shredded mozzarella cheese
1 tbsp olive oil
2 tbsp caramelized onions (optional)
1 tbsp chopped walnuts or pecans
Honey or balsamic glaze, for drizzling
Fresh arugula or thyme, for garnish
Instructions
1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
2. Brush the flatbread lightly with olive oil.
3. Layer on mozzarella cheese, pear slices, and crumbled gorgonzola.
4. Sprinkle with nuts and caramelized onions if using.
5. Bake for 8–10 minutes, or until the cheese is melted and the crust is crisp.
6. Remove from oven, drizzle with honey or balsamic glaze, and top with fresh arugula or thyme.
7. Slice and serve immediately while warm.
Notes
For extra flavor, roast the pear slices briefly before assembling.
Substitute blue cheese or goat cheese if gorgonzola isn’t available.
Add prosciutto or bacon bits for a sweet-savory twist.
Pairs beautifully with white wine or sparkling cider.
