These Vegan Tacos are bursting with bold flavor, color, and texture! Packed with seasoned plant-based filling, fresh toppings, and creamy sauce, they’re a quick, easy, and satisfying way to enjoy a healthy taco night at home.
Ingredients
1 tbsp olive oil
1 small onion, diced
2 garlic cloves, minced
1 can (15 oz) black beans, drained and rinsed
1 cup cooked lentils or crumbled tofu
1 tbsp tomato paste
1 tbsp soy sauce or tamari
1 tsp chili powder
1 tsp smoked paprika
1/2 tsp cumin
Salt and black pepper, to taste
8 small corn or flour tortillas
1 avocado, sliced
1 cup shredded lettuce
1/2 cup diced tomatoes
1/4 cup diced red onion
Fresh cilantro, for garnish
Lime wedges, for serving
Instructions
1. Heat olive oil in a skillet over medium heat.
2. Add diced onion and cook for 3–4 minutes until softened.
3. Stir in garlic and cook for another 30 seconds.
4. Add black beans, lentils or tofu, tomato paste, soy sauce, and spices.
5. Mash lightly with a fork while cooking for 5–7 minutes until heated through and slightly thickened.
6. Warm tortillas in a dry skillet or microwave.
7. Assemble tacos by layering the filling, avocado slices, lettuce, tomato, and red onion.
8. Top with fresh cilantro and a squeeze of lime juice before serving.
Notes
Add vegan sour cream or cashew crema for extra creaminess.
Make it spicier by adding diced jalapeños or hot sauce.
For a smoky flavor, roast your veggies or add a touch of chipotle powder.
