These Greek Lemon Potatoes & Chicken are the perfect one-pan meal — juicy, flavorful chicken roasted with tender potatoes in a bright lemon-garlic sauce. It’s simple, healthy, and packed with Mediterranean flavor, perfect for weeknights or Sunday dinners.
Ingredients
4 bone-in, skin-on chicken thighs (or breasts)
1 1/2 lbs Yukon gold potatoes, cut into wedges
1/4 cup olive oil
1/4 cup fresh lemon juice (about 2 lemons)
3 garlic cloves, minced
1 tbsp dried oregano
1 tsp salt
1/2 tsp black pepper
1/2 cup chicken broth
1 tbsp Dijon mustard (optional)
1 tbsp fresh parsley, chopped (for garnish)
Instructions
1. Preheat oven to 400°F (200°C) and lightly grease a large baking dish or sheet pan.
2. In a small bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, pepper, and Dijon mustard.
3. Place chicken and potato wedges in the baking dish.
4. Pour the lemon-garlic mixture over everything and toss to coat evenly.
5. Pour chicken broth around (not over) the chicken to keep it juicy.
6. Roast uncovered for 45–50 minutes, turning the potatoes halfway through, until chicken is golden and cooked through (165°F internal temp).
7. If desired, broil for 2–3 minutes at the end for extra crispiness.
8. Garnish with chopped parsley and serve warm.
Notes
For more flavor, marinate chicken in the lemon mixture for 30 minutes before baking.
Add a sprinkle of crumbled feta or kalamata olives for a true Greek touch.
Pairs perfectly with a Greek salad or tzatziki sauce on the side.
