Description
Slow Cooker Beef Manhattan is the ultimate comfort food — tender shredded beef served over fluffy mashed potatoes and thick slices of bread, then smothered in rich brown gravy. A hearty, stick-to-your-ribs classic that’s easy to make and perfect for cozy weeknight dinners.
Ingredients
2 lbs beef chuck roast
1 packet (1 oz) onion soup mix
2 cups beef broth
1 tbsp Worcestershire sauce
1/2 tsp garlic powder
1/2 tsp black pepper
2 tbsp cornstarch
2 tbsp cold water
Mashed potatoes, for serving
Slices of bread (white or Texas toast), for serving
Instructions
1. Place beef chuck roast in the slow cooker.
2. Sprinkle the onion soup mix over the beef.
3. Add beef broth, Worcestershire sauce, garlic powder, and black pepper.
4. Cover and cook on LOW for 8 hours or HIGH for 4–5 hours, until the beef is tender and easily shreds with a fork.
5. Remove the beef and shred it using two forks; set aside.
6. In a small bowl, whisk together cornstarch and cold water to make a slurry.
7. Stir the slurry into the slow cooker to thicken the gravy; cook on HIGH for 10–15 minutes.
8. Return the shredded beef to the slow cooker and mix to coat with gravy.
9. To serve, place a slice of bread on a plate, top with mashed potatoes, spoon beef and gravy over the top, and enjoy!
Notes
You can use leftover roast beef or pot roast for this recipe.
Add sautéed onions or mushrooms for extra flavor.
This dish pairs wonderfully with green beans or corn for a complete meal.
