Description
These Heart Envelope Cookies are a sweet and creative way to share love on Valentine’s Day. Buttery sugar cookies folded into envelope shapes and sealed with an adorable heart — they’re as fun to make as they are delicious to eat!
Ingredients
2 1/2 cups all-purpose flour
1/2 tsp baking powder
1/4 tsp salt
3/4 cup unsalted butter, softened
3/4 cup granulated sugar
1 large egg
1 tsp vanilla extract
1/2 tsp almond extract (optional)
Red or pink heart-shaped sprinkles or fondant hearts for sealing
Icing for decorating (optional)
Instructions
1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
2. In a bowl, whisk together flour, baking powder, and salt; set aside.
3. In a large bowl, cream together butter and sugar until light and fluffy.
4. Add egg, vanilla extract, and almond extract; beat until combined.
5. Gradually mix in the dry ingredients until a soft dough forms.
6. Roll dough on a lightly floured surface to about 1/8-inch thickness.
7. Cut dough into squares (about 3×3 inches).
8. Fold three corners toward the center to form an envelope shape, leaving the top corner open.
9. Place a small heart-shaped sprinkle or fondant heart in the center to seal the “envelope.”
10. Transfer cookies to the prepared baking sheet and bake for 9–11 minutes, or until edges are lightly golden.
11. Cool completely before decorating with icing, if desired.
Notes
For crisp edges, chill the dough for 15 minutes before cutting and folding.
Use royal icing or melted white chocolate to add decorative details.
